Pumpkin Spice Oatmeal (vegan)

This oatmeal is my favorite fall-themed breakfast,it's creamy, warm, pumpkiny and sooo delicious, you have to try it if you love pumpkin as much as I do!

For 1 bowl (~400 kcal)


Ingredients:

For the oatmeal

  • 1/2 cup pumpkin pure

  • 40 g oats

  • 1/2 cup soy milk

  • 1/2 cup water

  • 1 tsp pumpkin pie spice or gingerbread spice

  • 1 tsp sugar/ maple syrup

  • a pinch of salt

Toppings

  • 1/3 apple

  • 1/4 cup blueberries

  • a pinch of cinnamon

  • 1 tbsp of peanut butter

  • a splash of soy milk


Directions:

For the oatmeal combine the oats, milk, water, pumpkin pure, sugar, salt and spices in a pot and bring it to a boil on high heat. Reduce the heat to low and simmer the oatmeal until it reaches your desired consistency. Cut the apple in small cubes and combine them with the blueberries and cinnamon in a small bowl and microwave it for 1-2 minutes. Top the oats with the apple-blueberry sauce and a tablespoon of peanut butter, add a splash of soy milk to make it extra creamy and enjoy!
