Vegan Pancake Cereal

I don't even have TikTok, but I've seen these tiny pancakes everywhere and I've really been wanting to make them for a while. My version is, of course, vegan and it's based on one of my go-to pancake recipes, so you can definitely make them as regular-sized pancakes too. I really recommend trying this out, the tiny pancakes are so fun to eat, and making them actually doesn't take that much time.

For 1 portion


Ingredients:

  • 4 tbsp flour (I've used regular flour, but I think it would work with oat flour too)

  • 1-2 tsp sugar

  • a pinch of salt

  • 1 flat tsp baking powder

  • 1/2 tsp vanilla extract

  • 1 tsp apple cider vinegar

  • 1/2- 1 cup of water (how much you need depends on the type of flour you use, so start with less and add as much as you need to get a good pancake batter consistency)

  • toppings: vegan butter, maple syrup, soy milk


Directions:

Heat up a non-stick pan on high heat. Meanwhile in a mixing bowl combine the flour, sugar, baking powder, and salt, then add the wet ingredients and mix the batter until it's well combined.

To make the tiny pancakes I've used a spoon, and poured the batter on my -now hot- pan teaspoon by teaspoon (you can make a lot at the same time, so it actually only takes 10-15 minutes to make the whole batch). Once the top is set (this takes around 1-3 minutes), try flipping them one at a time and bake the other half for 1-2 minutes, then transfer to a cereal bowl. I didn't need to use any oil, because my pan is quite new, but feel free to use some neutral tasting oil or vegan butter if you have a hard time flipping the pancakes.

Once all of your pancakes are ready, top them with vegan butter, maple syrup, and some soy milk (I don't recommend using too much milk though, as it can make the pancakes a little soggy), or with your favorite pancake toppings and enjoy!
