Polenta Porridge (vegan)

When we talk about porridge everyone thinks about oats first, but did you know, that you can actually make it from corn meal too? I first tried this recipe when I ran out of oats, and guys, it was so worth it! It's creamy, decadent, and you can make it in even less time than oatmeal!

For 1 serving (around 350-400 kcal)


Ingredients:

  • 4 tbsp corn meal (150 kcal)

  • 1 cup of plant milk (I used sweetened soy, so I didn't put any sugar in it, but if you use unsweetened add 1 tsp of sugar if you want) (mine was about 100 kcal because of the sugar)

  • A pinch of salt

  • Vanilla powder/cinnamon to taste

  • Toppings (I used 1 tsp of peanut butter, some frozen raspberries and dried mulberries) (mine were around 100-150 kcal)


Directions:

Add all the ingredients to a small saucepan and cook it on high heat for 2-6 minutes, or until it"s thickened. Make sure to stir it frequently because it's likely to burn if you don't do so. Add the porridge to a small plate/pot, add your favorite toppings and enjoy:) Believe me, it sounds strange but it is so good, you really need to try it!
