Vegan Sushi

Sushi is one of my favorite foods, but before I went vegan I always ate the ones with salmon so I had to find good vegan alternatives. My favorites are avocado, mushrooms and pan-fried tofu, but you can make this recipe with any other fillings too if you want:)

For 48 sushi (2 portions, 400 kcal/serving)
Ingredients:
1 cup (240 ml) of of sushi rice (you can try other kinds of rice or even quinoa but this works the best)
2 cups (480 ml) of water
1 tbsp of rice vinegar
1 tsp of sugar
1/2 tsp of salt
1 avocado
4 mushrooms
1/3 block of tofu
ginger powder
garlic powder
3 nori sheets
soy sauce
wasabi
Directions:
First make your sushi rice! In a small pot combine the rice and water and bring it to a boil on high heat then reduce the heat to low and cover and simmer it for 5-10 minutes. Turn off the heat and place the pot on a cold surface if possible. Let it sit for 10 minutes, meanwhile combine the salt, rice vinegar and sugar. After 10 minutes stir the vinegar mixture in the rice and let it cool completely.
Cut the mushrooms into slices and fry them (you can use water or oil). When they are cooked add the ginger, garlic and some soy sauce and cook it until the sauce has reduced, the set it aside. Cut your tofu into strips, marinade it in soy sauce to a few minutes, then cover it with flour and fry it in a little bit of oil (you can try to do it without oil too but it only works with a really good non-stick pan).
Cut your avocado into small strips, and when your rice has cooled down assemble the sushi rolls!
Fold the nori sheets on half and cut them (you only need half of a sheet for 1 roll). Place some rice on the nori sheet (DON'T overfill it, because you won't be able to make a nice roll out of it, you only need a small amount). Press down the rice and add your filling (don't add to much of this either). Roll your sushi (I think it's easier than it looks but if you do it for the first time watch a tutorial on YouTube, I think that's the easiest way to learn it). Cut the roll into 8 equal pieces, put them in the fridge for 20 minutes to let it cool down and enjoy with some soy sauce and wasabi.
