Tomato- Walnut Pasta With Kale (vegan)

This is my favorite recipe for a really quick lunch or dinner. The kale and walnuts add a nice textural element to it and also really amazing flavors. Don't freak out because of the cinnamon, it actually works really well with recipes which call for tomato sauce, you should definitely try it!

For 1 portion


Ingredients:

  • 70 g (uncooked) pasta

  • water

  • 1/2 cup tomato sauce

  • 1 cup kale

  • a handful of fresh (or a tsp dried) basil

  • 1 tsp mustard

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • a pinch of cinnamon

  • salt and pepper to taste

  • 1 tbsp walnuts


Directions:

Cook and drain your pasta. Meanwhile, combine the rest of the ingredients (except the walnuts) in a small pot and bring them to a simmer. Once the pasta is cooked mix it with the sauce and serve it topped with the walnuts.
