The BEST 2 Ingredient Chocolate Mousse (vegan)

This chocolate mousse is literally the best recipe I've created so far; it's really easy to make, delicious, looks amazing and surprisingly it's kind of healthy too (the only ingredients being dark chocolate and aquafaba). Please, don't freak out when I tell you, that it's made with chickpea-water, you really can't taste it and it gives the best texture to the mousse, so make sure you try it out!:)

For 2 servings (300 kcal/serving)
Ingredients:
100 g dark chocolate (make sure that it's vegan)
1 can of chickpeas (we will use the water they come in, not the actual chickpeas)
optional toppings (I used some extra chocolate and cookie pieces)

Okay, I know what you're all thinking...chickpeas in a chocolate mousse sound REALLY weird, I agree, but you won't actually use the chickpeas, just the water from the can. It's called "aquafaba", and it's going to make your mousse so fluffy and creamy without adding any coconut cream or fancy vegan whipped cream (don't be afraid, you won't taste it at all, it's just for the texture). So trust me on this and give it a try, because I'm 100% sue you won't regret it!
So first you have to make a whipped cream kinda thing from your chickpea water. To do this open the can of chickpeas and pour the liquid in a mixing bowl (you can save the chickpeas for other recipes). With a hand mixer whip your aquafaba until it reaches a thick and fluffy consistency, similar to whipped egg-whites. Once this is ready chop your chocolate into small pieces and microwave it in a bowl until it melts (make sure to stir it every 10-20 seconds to prevent it from burning), or melt it on the stove in a double boiler. Now comes the part when you have to be careful: add half of your whipped aquafaba to the chocolate and stir it in with a spatula. You don't want to over-mix it, just to it slowly and carefully until it's well combined. When it's ready add the other half of the aquafaba and gently mix it in. At this point your mousse is basically ready, you just have to pour it in little bowls, mugs, or cups, put them in the fridge and wait for at least 2 hours, but I would recommend overnight to let them cool down and reach the best consistency. You can eat them as they are or top them with more chocolate, some cookie pieces, fruit or vegan whipped cream and serve them cold.
