Pasta dishes are great when you're trying to save money: it's really cheap, filling and yet delicious. This is my basic budget friendly spaghetti with tomato sauce recipe, I hope you enjoy:)
For 2 servings of pasta
Ingredients:
250g spaghetti pasta
1 can of diced tomatoes or tomato sauce
1/2 zucchini
1.5 cup of mushrooms
1/4 large or 1/2 small onion
1/2 tsp of garlic powder
1/2 tsp of dried basil
salt and pepper to taste
Directions:
First boil some water in a saucepan for your pasta. I usually use spaghetti for this but you can use any kind of pasta you like. Add the pasta to the water when it is boiling and cook it until soft.
Dice and saute your onion and garlic and cut your veggies into small cubes (you don't have to use the same vegetables I have listed, I always use the ones I have at home but the zucchini mushroom combination is the best). Add the veggies, tomato sauce/diced tomatoes and the spices to the onions and cook the until they are tender.
Serve your pasta with the sauce and put some herbs, vegan cheese, nutritional yeast or seeds on top (you can use anything you have at home or just eat it without extra toppings) and enjoy!:)
