Miso Maple Pear Oatmeal (vegan)

Oatmeal is my all-time favorite food (which might be a bit weird...🤔), so coming up with a recipe, that I like even more than the thousands of variations I've tried is quite challenging, but I managed to do it! This oatmeal is sweet, salty and cinnamony, and with the baked pear and tangy soy yogurt, it's just amazing!

For 1 portion
Ingredients:
For the baked pear
1/2 pear
1/2 tsp maple syrup
1/4 tsp miso paste
a pinch of salt
a dash of cinnamon
For the oats
1/2 cup oats
1 1/2 - 2 cups water or plant milk of choice
1 tsp miso paste
1 - 2 tsp maple syrup
a pinch of salt
Extra toppings
2 tbsp soy yogurt
tahini-miso dressing (1 tbsp tahini, 1 tsp maple syrup, 1/2 tsp miso paste)
cinnamon
Directions:
Start with the baked pear. Cut a ripe pear in half and brush it with the miso paste and maple syrup and sprinkle it with salt and some cinnamon to taste. Bake it in the oven for 20-30 minutes on 180° C, or microwave it for 2-4 minutes, or until soft and slightly caramelized.
To make the oatmeal mix the oats, water, maple syrup, and salt and cook it on low heat for 5-10 minutes. You can also make it in the microwave (mix everything and microwave it for 2-3 minutes). Once it's ready, stir in the miso paste and pour it in a bowl.
Top the oats with the baked pear, soy yogurt and tahini-miso dressing (for that just mix 1 tbsp of tahini with 1 tsp of maple syrup and 1/2 tsp of miso paste), then sprinkle some cinnamon on top and enjoy!
