Matcha Chocolate Chip Cookies (vegan)

Literally the best cookies I've ever made! They are easy to make, vegan and relatively healthy and absolutely delicious, you have to try them if you like matcha.

For 20 cookies
Ingredients:
50-100 g chocolate chips (I used this matcha flavored vegan white chocolate, but it works with any chocolate chips you like)
2 tbsp matcha powder
1/2 cup vegan margarine
3/4 cup sugar
1/4 cup soy milk
1 tbsp vanilla
1 3/4 cup flour
1 tbsp baking powder
a pinch of salt
Directions:
Preheat your oven to 200 ° C and in a large mixing bowl combine the sugar and vegan margarine. Once it's combined add the soy milk and vanilla and mix them in. In an other bowl mix the flour with the matcha powder, baking powder and salt, and combine with the sugar-margarine mixture. Add most of your chocolate but save some to put on top of the cookies. Put the cookie dough in the fridge to rest for 30 minutes, and after it's done scoop 1 tablespoon portions on a baking tray aligned with baking paper. Top them with some more chocolate and bake them for 9-12 minutes (you can make bigger cookies too but I usually prefer small ones). Place the baked cookies on a cooling rack and let them cook for a few minutes and enjoy!
