Mashed Potatoes With Mushroom Gravy (vegan)

For 2 portions


Ingredients:

For the mashed potato

  • 8 small potatoes

  • water

  • 1 tbsp of vegan butter/margarine

  • a splash of soy milk

For the gravy

  • 125 g mushrooms

  • 1 medium onion

  • 2 cloves of garlic

  • 1 pinch of ginger powder, salt and pepper

  • 2 tbsp of vegan butter/margarine

  • 2 tbsp flour

  • 2-3 tbsp soy sauce

  • 1 vegetable stock cube

Directions:


Peel and chop your potatoes and cook them until tender. Drain them and add the vegan butter, salt and a splash of soy milk. Mash them with a potato masher and add more milk if needed.

To make the gravy dice your onion and garlic and saute them in the vegan butter. Chop the mushrooms, add them to the pan and let them cook. Meanwhile mix the spices, flour and soy sauce in a small bowl and melt the veggie stock cube in a cup of hot water. Add the vegetable stock to the bowl and mix everything. Pour the mixture in the pan and cook until a thick gravy forms, then serve it with the mashed potatoes. You can eat this as a main dish, or serve it as a side with roasted veggies or really any food, this gravy makes everything delicious.
