Green Pea Soup (vegan)

My mum used to make this soup all the time when I was little and I always loved the bright colors and fresh flavors it has. It's really easy to make and it's healthy, vegan and delicious, you should definitely try it if you like green peas!

For 3 servings
Ingredients:
1 pack (450 g) frozen green peas (you can make it with fresh too if you have some)
1 onion
3 cloves of garlic
1 vegetable stock cube
salt and pepper to taste
dill (optional, I usually don't add it but last time I tried the soup with it and it tasted really good so you can try to experiment with it if you like dill)
water
juice of 1/2 lemon
a splash of soy milk
optional toppings (I used cashews, sun-dried tomatoes and an extra splash of soy milk)
Directions:
First dice the onion and saute it in a splash of water or a little bit of oil for a few minutes. When it gets translucent chop your garlic in small pieces and add it to the onion. Saute for 1-2 minutes, then add the peas and just enough water to cover them. Season it with salt and pepper and add the veggie stock cube. Bring it to a boil and simmer it for 10-15 minutes, then add the juice of 1/2 lemon and a splash of soy milk to make it extra creamy (don't use too much because it will become too liquidy). Blend it in a high speed blender until it becomes smooth and creamy and adjust the seasoning. Serve it on its own or with any toppings you like (I went for cashews, sun-dried tomatoes and an extra splash of soy milk, but it's also really good with a piece of toast on the side) and enjoy!
