Easy Vegan Peanut Butter Cookies

This is my favorite cookie recipe: the cookies are peanut buttery, crispy on the outside and chewy on the inside, they taste amazing, and they are actually relatively healthy too!

For 30 small or 15 large cookies
Ingredients:
90 g flour
1 tsp baking powder
a pinch of salt
150 g sugar
130 g peanut butter
100 g oats
50 g vegan butter or margarine
60 ml water plus more if needed
Directions:
First, mix the vegan butter and peanut butter in a large mixing bowl until well combined. Add the water and sugar and mix well. Combine the rest of the ingredients in another bowl, then add to the wet mixture. At this point, you can add anything you like: chocolate chips, dried fruits or nuts, or just leave it plain as I did. Cover the bowl and put the dough in the fridge for 20--30 minutes, or more. Preheat the oven to 180 ° C. Take the dough out of the fridge and form 15 large or 30 small cookies (roll the dough between your hands and put the little balls on a baking sheet lined with baking paper, then slightly flatten them, because they won't spread much while baking). Bake them for 8-15 minutes (for chewy cookies only bake for 8-10, for crispy ones for 12-15 minutes).
Let them cool a bit and serve with the plant milk of your choice, but they are equally delicious on their own. too!
