Easy Vegan Chili

This chili is my go-to recipe when I have no time, energy or money: it's easy, cheap, done in no time and really filling and delicious.


For 2 portions


Ingredients:

  • 1/3 block of tofu

  • 1/2 can of beans

  • 1/2 can of corn

  • 1 can of diced tomatoes or tomato paste

  • 1 medium onion

  • 2 tbsp chili powder (might need more depending the strength)

  • salt and pepper to taste

  • 1 avocado (optional)

Directions:

Dice your onions and saute them on a pot in some oil until translucent. Meanwhile crumble your tofu and add it to the pot when the onions are ready. Cook it for a few minutes, then add the beans, corn, tomatoes and spices as well and bring it to a boil (you don't have to cook it for a long time since everything is already cooked).

Serve it with half of an avocado, bread or vegan cheese, or eat it in it's own.
