Creamy Strawberry Oatmeal (vegan)

This oatmeal is seriously the best that I've made so far: it's sweet (without containing any sweetener), creamy, delicious, super filling, and the compote truly brings it to the next level!

For 1 serving (400 kcal/250 kcal without toppings )


Ingredients:

For the oatmeal

  • 70-100 g frozen strawberries

  • 40 g oats

  • 100 ml soy milk

  • 150 ml water

  • a pinch of salt

  • vanilla extract to taste

Toppings

  • 1 frozen strawberry

  • 1/3- 1/2 apple

  • 1 tbsp (17 g) homemade cashew butter (you can use any nut butter you have at home)

  • a pinch of cinnamon


Directions:

For the oatmeal cut your strawberries in half, put them into a pot along with your oats, soy milk, salt and vanilla and cook and stir it until it's creamy. Meanwhile chop your apple and strawberry into small cubes, combine them with the cinnamon and microwave them in a small bowl for 1 minute.

Pour your oats into a bowl and top it with your fruit compote and some cashew butter and enjoy!:)
