Chocolate Chia Pudding (vegan)

I used to not like chia pudding because the weird texture as a kid but this recipe converted me into a huge chia pudding fan (now I like a lots of different flavor combinations such as peanut butter-banana, or raspberry-mango), so if you're interested in more recipes let me know! Also, make sure to try this one even if you don't like chia pudding because it literally tastes like chocolate cake but it's much better for you:)

For 1 portion


Ingredients:

For the pudding

  • 1/4 cup chia seeds

  • 3/4 cup non-diary milk (I like to use soy or coconut the most in this recipe)

  • 1 tsp of maple syrup

  • 1 tsp of cocoa powder

  • 1 pinch of salt

For the toppings

  • 3-4 frozen or fresh strawberries

  • 2 tbsp chocolate granola


Directions:

Making the chia pudding is really easy: just mix the ingredients and put it in a mason jar or bowl for minimum 6 hours preferably overnight. When you're ready to eat your pudding microwave the strawberries in a small bowl or cup until they are soft and jam-like (you can also serve it with jam but that's usually too sweet for me). Top the pudding with the strawberry sauce and chocolate granola and enjoy! (It's also really good with a drizzle of peanut butter and some bananas if you prefer that instead of the berries and granola.)
