Carrot Curry Soup (vegan)

I have already said that you can make delicious soups out of any veggies you have at home...well this is no exception! It's kinda like the cheap alternative of pumpkin curry soup, it's made with only a few ingredients and it's delicious, you have to try it!


For 4 servings


Ingredients:

  • 1 onion

  • 3-4 carrots

  • 1 large/2 small potatoes

  • 1 vegetable soup cube

  • water

  • salt and pepper to taste

  • curry powder to taste (1-3 tbsp)

  • 1 tbsp of margarine/vegan butter


Directions:


Dice the onion and saute it in some margarine or water if you don't want to use oil. Cut the carrots and potatoes into small pieces and add it to the pot. Cover it with water, add the spices and veggie soup cube. Cook the vegetables until tender and blend the soup. Add more spices if needed and serve it with some bread cubes, fresh herbs or (as I did) fried onion.
