Vegan Banana Bread

I have been searching for the best banana bread for so long until I have found a recipe that I liked. Most banana breads are spongy and not moist enough...well with this one this is not the case. It's super moist and full of chocolate chips, just as a banana bread should be.


For one loaf

Ingredients:

  • 1 cup of flour

  • 1/2 cup of sugar

  • 1 tsp of baking powder

  • 1/2 tsp of salt

  • bananas

  • 1 tsp apple cider vinegar (tried it with normal vinegar it works too but lemon juice doesn't)

  • 1 tsp vanilla extract or 1 tsp cinnamon (or both)

  • 1/3 cup of coconut oil (works with other kinds of oil too)

  • 1/2 cup of water if needed

  • 1 bar of vegan chocolate (I like to use dark) (optional

  • 2 tbsp of peanut butter (optional)


Directions:


First preheat the oven (180 °C or 360 °F).

Combine the flour, sugar, baking powder and salt (and the cinnamon if that's what you use) in a big bowl, then in a separate one mash 2 bananas and mix them with the vinegar, vanilla extract and oil (if you use coconut oil melt it first!).

Pour the wet ingredients into the dry and mix until it's fully combined (add some water if needed). Break or cut the chocolate into small pieces and add it to the dough (if you want to make it fancy reserve some to sprinkle on top). Pour the mixture in a loaf pan with parchment paper, slice the last banana in half and put it on top. Melt the peanut butter and pour it on the cake (this is the time when you should add the extra chocolate as well if you have any).

Put the banana bread in the oven and bake it for 30-40 minutes (I prefer it after 30 minutes but if you want it to bake through properly leave it in the oven for a bit longer).
