Baked Pears With Cinnamon Granola and Yogurt (vegan)

I first made this recipe for our family brunch on Christmas Day and everyone loved it, even my skeptical grandma, who usually refuses to try any vegan food, so I thought it would be great to share this simple, yet delicious recipe with you too. It's amazing ay a light dessert or breakfast, but you can also serve it on top of a yogurt bowl, or even oatmeal to make a filling and delicious wintery breakfast!

For 4 portions


Ingredients

For the pears

  • 2 pears

  • 4 tsp maple syrup

  • 1-2 tsp cinnamon

For the granola

  • 1/2 cup oats

  • 1 tbsp nut butter (I used cashew)

  • 1 tbsp maple syrup

  • 1/2 tsp cinnamon

  • a pinch of salt

For the yogurt

  • 1/2- 1 cup plant-based yogurt (I used soy)

  • 1/2 tsp cinnamon

  • 2 tsp maple syrup


Directions

This recipe might seem a bit complicated based on the ingredient list, but don't be discouraged, it is actually really easy! First, preheat your oven to 180 ° C and start preparing the pears. Cut them in half, scoop out the center and brush them with some maple syrup and sprinkle with cinnamon. Bake them for 30-40 minutes.

To make the granola combine all of the ingredients in a small bowl and bake it next to the pears for 5-15 minutes depending on your oven (check and stir it regularly as it might burn if you leave it in for too long). Lastly, in another bowl mix the ingredients for your cinnamon-maple yogurt and let it sit in the fridge until serving.

Once everything is done serve the pears on a plate with some of the yogurt mixture and granola in the center and also on the side. You can add more toppings (walnuts or pecans work great), and even use store-bought granola instead of the homemade one if you like, but I think it's perfect as a light dessert this way.:)
