Autumn Salad With Baked Potato (vegan)

This recipe is quite special for me, because this was the first meal I ate after I decided to go vegan. I was interested in veganism and watched plenty of vegan youtubers for years but I only went fully vegan a few months ago. I remember sitting on my bed and randomly watching a video about veganism from Earthling Ed. After watching it I was just no longer able to eat animal products (in fact I was kinda scared to tell everyone first, so I ate meat at my boyfriend's house and I was literally sick after doing it). I know this seems really weird but this is exactly what happened, and after I made my decision I made this delicious salad and I never felt guilty about eating anything, or regretted going vegan ever since.

For 1 bowl of salad (400-450 kcal)


Ingredients:

For the salad

  • 2 big/ 6-8 really small potatoes

  • 1 cup of spinach

  • 1 cup of mixed leafy greens

  • 1 avocado

  • some cherry tomatoes (I only had 3 but I think it would be even better with more)

  • salt, pepper

For the dressing

  • 1 tbsp of mustard

  • 1 tbsp lemon juice

  • a pinch of salt

  • 1/2 tsp of sugar

  • a pinch of pepper

  • some water if needed


Directions:

First preheat your oven to 180 °C . Wash your potatoes and cut them in half if using small ones and into cubes/ wedges if using big ones. Put them in a mixing bowl with the salt and pepper (you can add other spices too if you want, I really like to add Italian herbs or curry powder). Place them on a baking sheet aligned with parchment paper. Cut the cherry tomatoes on half and put them on the baking sheet as well, and place it in the oven for 20-40 minutes (it really depends on your oven, but bake them until the potatoes get nice and golden brown).

Mix the ingredients for your dressing in a small mixing bowl and cut your avocado into small cubes. When the potatoes and tomatoes are ready put the spinach ,other greens and avocado cubes into a bowl, place the baked veggies on top and drizzle the dressing over. You can add some nuts or seeds for healthy fat but I didn't have any at the moment.
