Autumn Carrot Cake Oatmeal (vegan)

This carrot cake oatmeal is seriously fall in a bowl: it's cozy, sweet and delicious but it's healthy as well (no refined sugar, lots of fruits and veggies:) If you're interested try it out, and I hope you enjoy!

For 1 bowl of oatmeal (350-400 kcal depending on your choice of liquid)
Ingredients:
1 carrot (around 70 g)
25 g oats
1 1/2 cup of water or plant milk
1/2 apple
1 medjool date
1 fig
1 tbsp (around 16 g) peanut butter
cinnamon, nutmeg, ginger, clove (or you can use pumpkin pie spice or gingerbread spice instead)
pinch of salt
Directions:
Grate your carrot, chop the date and mix them with your oats, spices, salt and milk or water (I used water because I ran out of milk but I think it would taste even better with plant milk) and cook your oatmeal until it's your desired consistency. Meanwhile chop your apple and mix it with some cinnamon and microwave it for 1-2 minutes or until the pieces became soft and smell delicious (you can also cook them on the stove top but make sure to add some water to it if you choose this method). When your oatmeal is ready pour it into a bowl and top it with the apples, fig, peanut butter and a pinch of salt if you feel fancy (feel free to add some maple syrup if you want it to be sweeter but for me the date and the sweetness of the other fruits was enough:)).
